Choosing a Commercial Kitchen Scale: Match the Scale to the Station

A commercial kitchen rarely needs one scale — it needs the right scale at each station. Receiving wants capacity, prep wants speed, portioning wants checkweighing, and bakery or spice work wants fine readability. This guide maps A&D Japan's kitchen-relevant lines — SJ-WP and SK-WP waterproof scales, the SJ-HS fast bench scale, and the EK-i compact balance — to the stations where each earns its keep.
What makes a kitchen scale "commercial"
Four things separate a commercial kitchen scale from the consumer scale it superficially resembles: it holds accuracy through thousands of weighings a day; it tolerates the cleaning regime of a food business (wipe-down at minimum, full washdown where required); it carries relevant hygiene credentials such as NSF listing; and it runs for months on batteries so it can live where the work is, not where the socket is. Consumer scales fail on all four within months in a working kitchen.
The price difference buys longevity and consistency — and consistency is the commercial point: portion cost control and recipe repeatability both collapse if the instrument drifts.
Start with the station, not the scale
Map your weighing tasks before comparing models. Receiving and goods-in need capacity (10–30 kg and up) and toughness more than fine readability. Wet prep and protein portioning need washdown protection and, ideally, checkweighing. Dry prep and plating lines need speed above all. Bakery, spice blending, and recipe development need fine readability — grams matter less than fractions of a gram. Most kitchens resolve into two or three scales, not one.
Wet stations: SJ-WP (premium) vs SK-WP (value)
Both are stainless-pan washdown scales built for food areas; the difference is degree and features. The SJ-WP is IP67 — submersible, soak-cleanable — with a 0.5-second response and 5-step LED checkweighing lights that make it the portioning-line choice (see our checkweighing guide for how that workflow runs). Models span 3–30 kg. The BT variants add Bluetooth data output for HACCP records without breaching the seal.
The SK-WP is the value alternative: IP65 (hose-down protected, not submersible), NSF listed, SUS304 stainless construction, and about 1,200 hours of battery life — but a conventional load cell without comparator lights or a data interface. For general wet-area weighing where nobody is pacing a line against it, it does the job at a friendlier price. Models span 1–30 kg.
Dry stations: the SJ-HS portioning workhorse
For dry prep, plating, and general bench work, the SJ-HS is A&D's fast food-service scale: roughly 1-second stabilisation, a very large 25 mm display readable across a bench, a removable SUS304 stainless pan, and up to about 2,000 hours on four D batteries. Seven models cover 1 kg × 0.5 g up to 30 kg × 20 g.
It carries strong food-safety credentials — NSF certification on the US HSF versions and HACCP-support positioning — making it the default answer for stations that need speed and hygiene but not waterproofing. If splashes or washdown are involved, step up to the SK-WP or SJ-WP instead.
Precision corners: EK-i compact balances for bakery and recipe work
Yeast, spices, additives, and recipe development need readability a bench scale cannot offer. A&D's EK-i/EW-i compact balances bring lab-grade functions to the kitchen: sixteen models from 120 g up to 12 kg, resolution down to 0.001 g on the smallest and up to 1/60,000 of capacity (EK-610i), plus percent weighing, counting mode, and a standard RS-232C interface. EW-i models offer triple-range weighing — coarse and fine resolution in one instrument.

Capacity: heaviest container plus contents, with ~20% headroom. Readability: several times finer than the tightest tolerance you enforce. Environment: IP67 (SJ-WP) for soak-clean areas, IP65 (SK-WP) for hose-down, standard (SJ-HS, EK-i) for dry benches. Workflow: checkweighing lights and take-away weighing (SJ-WP) if you portion at speed; data output (SJ-WP-BT, EK-i RS-232C) if weights become records. Power: all four lines run on batteries — place the scale where the work is.
