Checkweighing and Portion Control: How Kitchens Hit the Target Weight Every Time

Checkweighing is weighing against a target instead of just reading a number: you set the desired portion weight and an acceptable tolerance, and the scale tells you instantly — usually with coloured lights — whether the portion is under, on target, or over. In a commercial kitchen it turns portioning from a judgement call into a pass/fail check that any staff member can perform at speed.
Why portion weight is a money number
Every over-portioned serving is ingredient cost given away, and every under-portioned one risks a customer complaint — or a dispute with a franchise auditor. A kitchen plating 500 portions a day at even 5 g over target gives away 2.5 kg of product daily; for proteins, that adds up to real money over a month. Portion control is also a consistency tool: the reason a dish tastes the same on Tuesday as it did on Saturday is that the same amount of everything went into it.
The obstacle is speed. Reading digits, doing mental arithmetic against a recipe sheet, and adjusting takes seconds per portion and full attention — which is why portioning drifts during the rush. Checkweighing removes the arithmetic.
How checkweighing works: targets, tolerances, and traffic lights
A checkweighing scale stores a target weight and upper/lower limits. As product goes on the pan, comparator lights show where the weight sits relative to the band. That glance is the entire skill requirement. New staff portion accurately from their first shift, and the line keeps moving: add product until the light goes green, lift, next. Take-away weighing: portioning out of a bulk container
Real kitchens often portion in reverse: a tub of marinated chicken sits on the scale and staff remove one portion at a time into packs or pans. The SJ-WP supports this directly with auto-tare and negative comparison — place the full container, tare to zero, and each amount removed shows as a (negative) weight checked against the target band. No re-taring between portions, no lifting the tub.

A scale can only pace the line if it settles faster than the operator moves. Portioning happens where food is — which means splashes, washdown, and cold rooms. The SJ-WP is rated IP67: dust-tight and submersible to 1 metre for 30 minutes, so at the end of shift it can be soak-cleaned in water with pH-neutral detergent rather than carefully wiped around. The weighing pan is removable stainless steel (SUS304), the electronics and sensor are enclosed separately for ruggedness, and the scale operates from -10 °C — cold rooms included.
